My most frequent breakfasts are: steamed stuffed bun, steamed bread or pie+porridge, fried dough sticks+soybean milk, bean curd or egg custard, noodles or dough soup. The characteristic breakfasts in my hometown are:
1. Ballast porridge. Many southern friends have never heard of or eaten heavy porridge. Sticky ballastless porridge is a famous breakfast porridge in Northeast China, which is not only nutritious and delicious, but also soft and waxy in taste, and it is the heart treasure of Northeast people. Ballast porridge is made of corn kernels and kidney beans. "Ballast" is the daily name of corn kernels in Northeast China. First, wash the corn dregs and soak them in cold water for 7 to 8 hours, so that the corn grains can absorb water and expand, and the pot is easy to boil. In Northeast China, soaking corn dregs was completed the day before yesterday, and the next day, you can directly cook in the pot, adding a spoonful of flour alkali when cooking, so that the porridge cooked is thick and soft. When eating heavy porridge, you need a big cake of corn flour, egg sauce, a mustard knot or garlic eggplant, and a steaming bowl to warm your feet.
2. Big steamed stuffed bun. Steamed buns are an indispensable breakfast for the northeast people. The big steamed buns in the northeast are old and fragrant, with a big, hungry and oily stuffing. The juice soaked the skin of the steamed buns, and it was delicious when you took a bite. Northeast big steamed buns are full of the genes of the East, and they are all "wrapped", and each steamed bun can hold a plate of dishes. There are also many kinds of stuffing, such as pork with cabbage, white meat with sauerkraut, leek eggs, corn stuffing, vermicelli kohlrabi sauce, tofu stuffing and so on. Sauerkraut, in particular, can be versatile in Northeast China. No matter what kind of meat it is paired with, it will add a crisp feeling.
3. Fried dough sticks and tofu brain. Fried dough sticks are the "shoulders" of the national breakfast industry, and the whole people have breakfast. In the early morning, whether in the southern city or the northern city, a hot oil pan will be set up in the breakfast stalls in the streets and lanes. At breakfast, the master will roll the oil pan with a pair of long chopsticks, fry the expanded fried dough sticks, clip them out and put them on the shelf to drain the oil. In Northeast China, deep-fried dough sticks with bean curd are the standard breakfast for the northeast people. Southerners eat tofu brain and like to add sugar to it; Northerners like to eat salted bean curd. Tofu brain in Northeast China will be poured with special marinade, shrimp skin, pepper and coriander, and the big fritters will be soaked in tofu brain, which will taste delicious and rich.
4. Egg Castle. Egg burger is a special food in Northeast China. On the streets of various cities in Northeast China, you will see stalls selling egg burgers on both sides of the street. Egg-burger is one of the must-have breakfasts for students' parties and office workers, which uses molds to put flour together with ingredients such as meat stuffing, eggs, pork floss and ham sausage, and bake them to make them fragrant, salty and delicious.
5, dough drop soup. Dough soup is a delicious food that every family in the north will make, especially in the northeast, every mother will make it secretly. There are tomato and egg soup, mushroom and tomato soup, assorted soup and three fresh soup. But no matter what ingredients are added, it is a soup that every family in the north loves to drink, which is nutritious and delicious. Especially in the cold, a bowl of steaming soup in the morning makes my stomach warm and refreshed all day.
6. jiaozi. Northeasters love to eat jiaozi all the year round. No matter whether they are on holidays or at rest, they should take jiaozi to eat, and it is also common to eat jiaozi. Put jiaozi wrapped in advance outdoors, and get up in the morning to cook a bowl of jiaozi for breakfast, which saves time and effort and is delicious. Dumplings in Northeast China are thin and big, delicious and juicy, and pork stuffing with sauerkraut is the most delicious.
7. Big wonton. Wonton in the northeast is also big, with a lot of meat stuffing, which is usually wrapped in advance and placed outdoors. In the snowy season, the weather is cold. Get up in the morning to cook a bowl of wonton, add some soup, and eat the soup and wonton together. It is warm all over, which is most suitable for cold.
8. Fried oil cakes. Fried oil cake is a traditional food in Northeast China, and children like to eat it as a snack. The oil cake is fried into golden color with glutinous rice balls in an oil pan. When it is eaten, it is dipped in white sugar. It tastes tender outside and soft and sweet.
