1. Lanzhou Ramen.

Erbai refers to white radish, the radish slices are as white as jade, and Sanhong refers to red chili oil.

The four greens refer to green coriander and garlic sprouts.

Wuhuang refers to the yellow color of the noodles, their chewy texture and smooth texture.

2. Stuffed skin.

This name may only be used in Gansu, and it is commonly known as Liangpi.

Depending on how the stuffed skin is made, some are golden and shiny, while others are dark green, but they are sour, spicy and delicious.

The taste is different from Shaanxi Liangpi and Xinjiang Liangpi, and the texture is chewier.

3. Sweet glutinous rice.

This one is also sold in Dongfang Palace Beef Noodles in Beijing, but the taste is not as good as the one in Lanzhou.

4. Gray beans.

I eat this every time I go to Lanzhou, and I never get used to it.

The sweet fermented grains are cold, while the gray beans are hot. Inside are hemp-colored peas, boiled with white sugar and red dates.

It's sweet and thick. Those who like red bean paste can try it. I really can't get used to the taste.

5. Grilled lamb tripe, spicy and sour lamb tripe.

BBQ is available in many cities, and Lanzhou’s spicy and sour lamb tripe is a must.

The mutton in the northwest is very good. The hot and sour lamb tripe is sour and spicy, which is both crispy and chewy. It is a must-order dish for locals when eating barbecue.
