1. Tomato scrambled eggs
Method: Wash the tomatoes and cut into pieces, beat the eggs. Tomatoes can be peeled or not peeled according to personal preference. It depends on personal preference. Add oil to the pot, pour in the egg liquid, fry the eggs and set aside. I like to fry them tenderly. Pour a little oil back into the pot, turn on high heat, and add the tomatoes. Fry the tomatoes until they produce red oil and have a rustling feel. Add sugar and a little tomato paste. Frying out the red oil is the key. This is definitely a lot different from the flavor that is not fried thoroughly. Finally, pour in the eggs, add a little salt and stir-fry evenly. If you add tomato sauce, you can use less salt.
2. Stir-fried shredded pork with pepper
Method: Shred the lean meat, add salt, soy sauce, a little sugar, and water starch and mix thoroughly. Cut the garlic into minced garlic, wash the peppers, remove the seeds and roots, and cut into shreds. Heat the pan, pour in oil, add shredded pork, stir-fry until shredded pork changes color, set aside. Pour a little oil again, add minced garlic, and stir-fry until fragrant. Pour in shredded peppers, stir-fry for a while, add oyster sauce, and stir-fry evenly. If you like it softer, add some water and simmer. Pour in the shredded pork, add an appropriate amount of salt according to personal taste, and stir-fry evenly.
3. Braised Plum Pork Ribs
Method: Chop the ribs into small pieces, wash them, blanch them in cold water and set aside. Add a little oil to the pot, add the blanched pork ribs, and fry until the surface is slightly brown. Add soy sauce, oyster sauce, and tomato sauce and stir-fry evenly. Pour in hot water, add brown sugar and plum blossoms, cover, and simmer over medium heat until the soup thickens.
