Dachang delicacies include Jingdong Meat Pie, Dachang Halal Eight Bowls, Snail Rooster, Peanut Glutinous Rice Cake, Nansha Cake, Kidney Bean Roll and Pea Yellow, etc.
1. Jingdong meatloaf: filled with beef and mutton, each large one is about 500g, and the small one is 300g.
Jingdong Meat Pie was created by Yang Jinglu in Xiadian Town, east of Beijing (part of today's Dachang Hui Autonomous County).
It is said that Emperor Qianlong passed by this place in 1770 and tasted this kind of meat cake and was full of praise for its color and aroma.
2. Dachang’s eight halal bowls: In the food culture of the Hui people in Dachang, the eight halal bowls are famous, have a long history and are enduring.
The eight large bowls include stewed beef, stewed offal, carrots, long yam, kelp, vinegar cabbage, vermicelli, meatballs, fried tofu, etc. The limit is eight bowls, and the combination is flexible.
3. Snail turn: Stretch the half-baked dough into thin strips, put sesame sauce and pepper salt, plate them together like a snail shape, press it flat, bake it on the pan first, and then bake it on the grill.
Once baked, it's crispy on the outside and soft on the inside.
The snails that were not sold out that day were roasted once or twice, called "dried snails". They were broken into pieces by clapping with your hands, and they were crispy and crispy when you tasted them.
4. Peanut glutinous rice cake: Sift glutinous rice flour, sticky rice flour and clear noodles into a large bowl. Boil water, sugar and coconut milk together. After freezing slightly, pour into the flour and mix well. Cover with a cloth for 10 minutes.
Dip your hands in oil, knead the mixed ingredients into a soft and smooth dough, divide it into small pieces as big as lychees, roll them into balls, shape them into nests, add an appropriate amount of fillings, roll them into balls, and put them on an oiled plate.
Steam for 3 minutes over water, take out, and coat with coconut mash. Serve.
5. Nansha Su: Nansha Su is also known as Bagou Sugar Cake.
It is stuffed with white sugar, green and red silk, melon seeds, walnut kernels and seasonings, mixed with flour, wheat flour, stuffed, shaped and baked.
Crispy, sweet and refreshing.
6. Kidney bean rolls with pea yellow: It is said that one summer during the Guangxu period of the Qing Dynasty, Cixi was resting in Jingxinzhai. Occasionally she heard the sound of gongs and shouts outside the red wall, and asked: "What are you doing?" The servant's answer
He said, "He sells pea yellow and kidney bean rolls." After tasting his kidney bean rolls, pea yellow thought it was delicious.
So she stayed in the palace to make snacks for her, and kidney bean rolls with pea yellow became a treasure of the Qing palace.
