What is "brain"?

"Brain" is an out-and-out Taiyuan snack, also known as "Bazhen Soup", which was invented by Fu Shan, a famous scholar and physician in the late Ming and early Qing Dynasties. Legend about the brain

After the death of Ming Dynasty, Fu Shan, a famous doctor, lived in seclusion in his hometown and cared for his mother, and created "Bazhen Decoction" to make her recover. Later, he taught this to a restaurant and listed it as "Qingheyuan". "Bazhen Soup" was renamed "Brain". Whenever Fu Shan treats patients who are weak and in need, he tells them to "eat the mind of Qing Heyuan". It means eating the brains of the rulers of Qing Dynasty and Yuan Dynasty.
