Materials:
700g of chicken feet, two slices of onion, three slices of ginger, one head of garlic, 0.5g of sugar/kloc-0, 2 star anises, cooking wine 1 spoon, soy sauce 1 spoon, half a tablespoon of soy sauce, proper amount of salt and pepper.
Exercise:
(1) Wash the bought chicken feet and cut off the nails.
(2) Cut the onion, ginger and garlic into sections for later use.
(3) Boil the chicken feet in cold water for three minutes and then take them out. You can go bloody.
(4) Let the water go, be sure to let it go, or it will explode easily in a while.
(5) Put oil and 30 grams of sugar in the pot.
(6) The sugar is slightly discolored, and pepper is added to saute.
(7) Pour chicken feet, stir fry quickly, pour in cooking wine, onion, ginger and garlic and stir fry evenly.
(8) Add water to drown the chicken feet. Add soy sauce, boil star anise and stew for 40 minutes.
(9) After 40 minutes, add salt and turn to high fire to collect juice. Clean the soup.
2, spicy chicken feet.
Materials:
500 grams of chicken feet, 4 grams of ginger, four or five cloves of garlic, 5 grams of dried chili, 2 grams of pepper, 4 slices of fennel 1 g, 3.5 spoons of soy sauce, half a spoonful of soy sauce, proper amount of cumin powder, sugar 1 g, cinnamon 1 block and 2 pieces of star anise.
Exercise:
(1) Buy chicken feet, thaw them and clean them with warm water for later use.
(2) Cut off the nails of all chicken feet one by one with scissors, and divide them in two at an oblique angle, so that they taste better.
(3) Fill the pot with water, put in the cut chicken feet, then pour in a proper amount of cooking wine, boil it, there will be foam, scoop it out with a spoon, and then clean it with warm water.
(4) Rinse with cold water again and drain for later use.
(5) Prepare all necessary spices: fragrant leaves, star anise, fennel, pepper and cinnamon. Cardamom

3. Braised chicken feet.
Materials:
2 kg of chicken feet, 1 cauldron of beer, 1 spoon of oyster sauce, 2 tablespoons of soy sauce, 1 spoon of cooking wine, 1 5g of chopped green onion, 4 cloves of garlic, 5 slices of ginger, 1 g of pepper granules.
Exercise:
(1) Prepare 2kg chicken feet, wash them first and then soak them 1 hour or more.
(2) Cut off the nails, be sure to cut them off, because the nails are dirty.
(3) Then cut into two sections.
(4) Ingredients: prepare onion, ginger, garlic, star anise cinnamon and pepper.
(5) Put the pot in cold water, add a few slices of ginger and a spoonful of cooking wine and blanch for five minutes.
(6) Next, mix a sauce, 2 tablespoons light soy sauce, 1 tablespoon black soy sauce and 1 tablespoon oyster sauce.
(7) Add rock sugar to the hot oil in the pot and stir-fry the sugar color until it is purplish red.
