What is a dry pot dish?

Take dry shrimp as an example-

Ingredients: 250g of northern herring, celery 1, 2 potatoes, 5 slices of onion 1, 5 slices of ginger, 5 slices of garlic, 2 pieces of cooking wine, 2 pieces of black pepper 1, 2 pieces of salad oil, 5 pieces of salt and 3 pieces of dried pepper.

Steps-

1. Wash the shrimps and cut into pieces, then marinate them with cooking wine, a little salt and black pepper for 30 minutes;

2. Cut potatoes into small strips, shred onions, cut celery into sections, and prepare ginger slices and garlic cloves;

3. Cover the salted shrimps with a layer of dry starch;

5, fry the shrimp again, fry until it turns red and take it out;
