How to make super delicious air-dried beef jerky?
First cut the beef shank into melon strips (not too thick) and soak it in cold water for an hour, then filter the blood (be sure to Strain the blood water, otherwise it will be fishy) Pour in soy sauce, cooking wine, dark soy sauce~
Add onion, ginger, garlic (less garlic, more ginger), star anise, bay leaves, cinnamon, cumin, chili, sesame salt, chicken essence Put it in and start marinating. Stir evenly, I usually use my hands for this step

Take out the meat and hang it, I use Use a clothes hanger with a clip, put the meat one by one on the ventilated back balcony to air-dry
If you like it drier, air-dry it for three days; if you like it softer and moister, air-dry it for one and a half days (the dryer one is about More than three kilograms of beef will produce one kilogram of dryness, and if it is wet, about two and a half kilograms of beef will produce one kilogram of dryness)
