Caesar salad with crispy bread

Salad (4 persons):

Roman lettuce, one large (or two small)

Caesar sauce:

1 garlic (two small garlic can be used), 3 oily anchovies, appropriate amount of salt, 1 egg yolk, 1 tsp lemon juice and 1 tsp mustard sauce. 1 minced garlic, appropriate amount of black pepper, and appropriate amount of parmesan cheese

Practice:

1. Take half a loaf of French bread, cut the bread in half, and then finely cut it into bite-sized sizes for later use.

2. Crispy bread pieces and minced garlic. Pour 3 tablespoons olive oil into a small bowl, then add minced garlic, soak for about 1~15 minutes (the longer the time, the more fragrant the flavor), then pour garlic oil on the bread and mix well.

3. Crispy croutons Spread the croutons dipped in garlic oil on a baking tray (with baking paper), grind black pepper and Parmesan cheese to taste before entering the oven, and add a little salt if you want a stronger flavor.

8. Treating lettuce with salad: First, cut off the roots, take off large leaves, and better clean the dust on the stems. Soak the lettuce with a very small amount of running water for 15 minutes. Dry the washed Romain lettuce, cut it into bite sizes, and drain it with a drainer.

Tips: remember to drain the water fully, otherwise it will affect the taste.

9. Serve lettuce in a dish, pour in a proper amount of Caesar sauce, grind a large amount of Parmesan cheese, and mix well. Then add the baked bread pieces and mix well. Before serving, plan the cheese slices for decoration.
