Barbecue is probably the most primitive way of cooking. Fuel is used to heat and dry air, and food is placed in hot dry air near the heat source to heat food. Basic classification:
Barbecue can be divided into direct baking and indirect baking. Direct baking can be divided into open fire and dark fire, while indirect baking can also be divided into iron plate, slate and copper plate, which have different requirements for charcoal. There are three kinds of charcoal suitable for barbecue in China. One: log charcoal, two: machine-made charcoal and three: industrial coke. Log charcoal can also be divided into fruit wood and miscellaneous wood. Fruit trees mean that hardwoods such as apples, pears and hawthorn taste better, while miscellaneous trees including poplars, Robinia pseudoacacia and pine trees taste average.
