In 1897, he moved from a small rural village to Laoting County, settled on Chengguan South Street, and opened a store called "Liu Ji Roast Chicken Shop", specializing in the roast chicken business.
When Liu Tan, the imperial guard with a sword, returned to his hometown to visit relatives, he accidentally tasted Liu Ji's roasted chicken and pointed out that the shape was not beautiful.

Liu Tan presented the improved Liu Ji Roast Chicken to the Empress Dowager Cixi and was named "Liu Mei Roast Chicken".
Liu Jun, who was praised by the Empress Dowager Cixi, also changed his name to Liu Mei.
