details and skills of home-made dried sweet potatoes
1. Almost all kinds of sweet potatoes can be dried into dried sweet potatoes, but the sweet potato with red skin and red heart is the best taste, and the dried sweet potatoes are sweet enough. Of course, you can also choose other varieties of sweet potato, such as sweet potato with yellow skin and yellow heart or purple potato, and you can try any sweet potato you think is sweet enough.
2. The sweet potato just dug out of the ground is not suitable for drying dried sweet potatoes, because the starch in this sweet potato has not been fully saccharified, and the dried sweet potatoes are not sweet enough. Put them in a ventilated place indoors to dry for a period of time, so that when the surface is slightly soft, it is very sweet to use them to make dried sweet potatoes. It is better if it can be stored in the cellar for two to three months.
3. Wash the prepared sweet potato, then peel it off, cut it into thick slices and steam it in the pan. If you plan to cut into strips for drying, cut the thick slices into 1cm or so, and steam them before changing them into thick strips. If you plan to cut it into thin slices for drying, cut it a little thinner, and don't change the knife after steaming.
4. Pay attention to the scale when steaming sweet potatoes. If the steamed sweet potatoes are rotten into mud, they can't be done. They should be cooked but not rotten, and they can stand knife cutting and hand holding.
5. Put the sliced sweet potato or sweet potato strips on the bamboo plaque, put them in a sunny and well-ventilated place and start to dry. Remember to turn them every two or three hours until they are soft and hard enough to eat.
6. Usually, it can be put away in the air for about two to three days. If it is rainy in the middle, it can be put back and dried in the microwave oven or oven. Before drying, you can also use the microwave oven or oven to dry it a little, which can greatly shorten the drying time.
7. If the dried sweet potatoes can be eaten in a few days, you can dry them as much as you like, as long as they are dry. However, if the dried sweet potato is to be preserved for a long time, it needs to be dried relatively, and it should be dried at a ratio of about 23 grams per 1 grams of fresh sweet potato, that is, it should be dried to about 8%, and it is most suitable to be soft and chewy.
8. After drying, the dried sweet potatoes should be sealed with fresh-keeping bags or boxes and stored in the refrigerator. It is better if they can be vacuum-pumped.
