Also known as eel. The body is slender and snake-shaped, with a body length of about 2-7 cm and a maximum length of 1 meter. The front of the body is flat at the back, and the tail is pointed. The head is long and round. The mouth is large, end-position, the upper jaw is slightly prominent, and the lips are quite developed. There are fine teeth on the upper and lower jaws and the bone of the flap. The eyes are small and covered with a thin skin. The head is thick and the tail is thin, and the body surface is protected by a smooth mucous membrane, without scales, and the color is yellowish brown.
The body has irregular dark spots, and the underdeveloped fins basically disappear. There is only one triangular thorn in the whole body, which is less and thicker. The meat is tender and delicious. Monopterus albus often lives in the muddy bottom of paddy fields, rivers, streams, ponds, canals, lakes, etc., and is produced all over China, with the Yangtze River valley in China, Liaoning and Tianjin producing more, and the production period is from June to October, and the most fertile is from June to August.
It is widely distributed in eastern Asia and nearby islands, starting from Southeast Asia in the west, the Philippine Islands in the east, Japan in the north and east indies in the south.
