Ingredients: two turtles, one sparerib and five slices of ginger.
Seasoning materials: 1 spoon cooking wine and proper amount of edible salt.
Production method:
1. Wash the pork belly, chop it into pieces, drain the blood in boiling water, then wash it with clear water, put it in a pot, add appropriate amount of clear water and ginger slices and start stewing.
2. After the turtle is slaughtered, chop it into pieces, heat the oil in the pot, put the chopped turtle into the fragrance, and add some cooking wine to remove the fishy smell. (If you don't want to fry in the pot, you can omit this step and put it directly into the soup pot with the ribs. )
3. Wait for the ribs soup to boil, stew for 20 minutes, and add the fragrant nail fish to stew until cooked. After cooking, add some edible salt to taste.
Tips:
Soft-shelled turtle meat is tender, not as difficult to cook as ribs, so it is put in the back.
You can also change the ribs into lean meat or stew them with other ingredients.
Turtles can be used for ordinary food and medicine. When I take medicine, I usually stew it with Smilax glabra to clear away heat, detoxify and remove moisture.
Stewed turtle with Smilax glabra
Ingredients: a turtle, 50 grams of Smilax glabra.
Seasoning material: appropriate amount of edible salt.
Production method:
1. Pour a proper amount of water into the pot, and then put the turtle into the pot. When it crawls, the water temperature rises gradually and the turtle will excrete urine. When the water boils, the tortoise is already dead, so immediately pick it up, scrub it clean, cut the tortoise into pieces with a knife and put it in a clay pot.
2. After washing Rhizoma Smilacis Glabrae, put it into a casserole, add appropriate amount of water, cook it with high fire until it rolls, then cook it with low fire for about 5 hours, season it with refined salt, and pour it into a soup basin to serve.
Tips:
Tortoise shell is also a kind of medicine. Here, the turtle shell is put into an earthenware pot and boiled for a long time, so that the juice of the turtle shell can be boiled and effective.
Although there is a word difference between Smilax glabra and Poria cocos, they are two kinds of medicinal materials. Make no mistake, Smilax glabra is used here.
