How can steamed glutinous rice be fragrant and soft?
1 Prepare materials. Wash the glutinous rice, soak it in clear water for 3 to 4 hours, and then drain the water. Wash plum beans and soak them in clear water until they are soft. Wash the dried mushrooms, soak them in clear water for 3 times until soft, and then cut them into cubes. Chop onions and garlic. Dice the chicken breast, add a little sugar, soy sauce, pepper and white powder or corn flour to marinate.
2 Add water to the soaked plum beans and cook them slowly with low fire until they are cooked and soft. In addition, stir-fry chopped onions and garlic in a little oil (soft and slightly yellow) and leave 3/4 of the weight.
3 Add the marinated chicken breast to the remaining 1/4 portions of sauteed onion and garlic, stir-fry slightly, and then add the diced mushrooms and stir-fry. Finally, mix in the appropriate amount of oyster sauce and soy sauce, and set aside.
4 Add a little oil to the hot pot and pour in 2/4 portions of fried shallots and garlic. Stir-fry the drained glutinous rice until fragrant, and add 6 tablespoons of oyster sauce, allspice powder, pepper, sugar, salt, soy sauce and black soy sauce to stir-fry until fragrant.
5 Add 1/4 portions of sauteed minced onion and garlic and 2 tablespoons of oyster sauce to the cooked plum beans, and mix well for later use.
6 Prepare a large steaming tray and apply a little oil (to prevent the pan from sticking). Mix half of the fried glutinous rice, diced chicken, mushrooms and plum beans, and pour them into a large steaming plate.
7. Repeat the above steps for the remaining glutinous rice, diced mushroom chicken and plum beans, and then put them in a steaming tray.
Sprinkle a little water on a large steaming tray filled with glutinous rice, and steam in a preheated steamer 1 hour. Mix the glutinous rice evenly with a spoon and steam it. If the glutinous rice is still dry and hard, add a little water and mix well to continue steaming until cooked.
