Shaanxi is divided into three regions, namely, northern Shaanxi with high loess slope, Guanzhong in Qinchuan with 800 Li and southern Shaanxi in Qinba Mountain area. Three completely different natural landscapes have jointly created a rich and colorful staple food ecology in Shaanxi.
Northern Shaanxi is located in the Loess Plateau with a dry climate. Here, millet, buckwheat, potatoes and other miscellaneous grains are the dominant foods.

The barren land in northern Shaanxi and Shuozhou, Shanxi, is not suitable for growing wheat, and there has been a habit of eating buckwheat since ancient times. This kind of cereal originated in Central Asia is very popular in northern Shaanxi because of its rich nutrition and convenient eating. Together with Lamian Noodles in Lanzhou and Daoxiao Noodles in Shanxi, buckwheat noodles have developed in twists and turns for more than 600 years. Buckwheat noodles have thin black stripes and smooth tendons, which can be eaten with hot mutton soup in winter and cold noodles in summer.

Compared with northern Shaanxi, there is more precipitation and higher temperature in Guanzhong area, and wheat is planted in the whole plain area.

The bowl is flat and the mold is wide, which is the comfort of Guanzhong people. From the minced meat noodles in Kansai Prefecture, we ate all the way, including dipped noodles, oil-sprinkled noodles, Biangbiang noodles and paste noodles ... I don't want to introduce them here, but I want to talk about another kind of noodles made of corn-corn noodles.
Corn flour dough is the most common food in Shaanxi. Add corn flour into the boiling water in the pot and stir with a rolling pin or a large iron spoon until it is uniform and sticky. A pot of maocai, golden and attractive, was nicknamed "Colonel Huang". You can add mashed garlic or leeks to the syrup. After adding soup, it is also called "water besieged city".

Compared with sticky solid dough, noodle fish has brought the delicacy and flexibility of corn flour to the extreme. Mix wheat flour and corn flour into a paste, put it in a boiling pot, boil it into a paste, and drop it into cold water with a colander. If you like to chew slowly, just chew two or three times, because it's too soft and slippery.

Anyone who has studied geography knows that Qinling Mountain is the dividing line between dry land and paddy field in China, and the central part of Guanzhong and southern Shaanxi is separated by Qinling Mountain. Naturally, people in southern Shaanxi prefer to eat rice, but they are also from Shaanxi, and they also have their own unique "pasta".

Hanzhong's "hot dough" is actually made of rice, which is ground into rice slurry, steamed into thin skin, oiled and cut into strips. Generally, bean sprouts and kohlrabi will be put in the side dishes in the store, and a spoonful of Chili noodles will be left, and a little garlic will be put according to personal taste, which is very soft and delicious. In Fengxian County near Hanzhong, the administrative division is Guanzhong, but in the south of Qinling Mountains, it is mostly eaten every morning with a bowl of vegetable tofu soup unique to Hanzhong, and seven out of ten people will eat it like this.
