2. Moderate temperature: ordinary dim sum bread (60- 120g dough), domestic oven 150 degrees, commercial oven 190 degrees, 169 degrees, 15-20 minutes or so.
3, high temperature and short time: generally small biscuits, small size, less moisture, relatively large oil, domestic oven 200 degrees, commercial oven 10, 190, 15-20 minutes. Small size, fast heat conduction, high oil content, easy to set at high temperature.
