What are the specialties of Wuzhen, Zhejiang?

1. Dried stinky tofu. Dried stinky tofu is available all over the country, but Wuzhen’s stinky tofu has a unique flavor.

It is made from high-quality dried tofu that has been brewed for more than 20 hours. It does not use chemical agents and is only brewed with traditional brine, so it has no peculiar smell and has a pure aroma.

Traditional brine is not easy to come by. Some stores have used the brine for several years. Vegetable stems and bamboo shoot roots are added every year. In order to prevent deterioration, red-hot iron tongs are used to put them into the brine for sterilization from time to time.

2. Gusao Cake Wuzhen pastries are most famous for Gusao Cake. Gusao Cake is famous firstly because of its legendary story, and secondly because it is salty yet sweet, oily and sesame, and has a crisp, loose and glutinous country flavor.

Gusao cake has been produced in Wuzhen for at least hundreds of years. Its "biography" can be found in the "Native Products Chapter" of Volume 20 of "Wuqing Town Chronicles" compiled by Dong Shining and Lu Xuepu, Wuzhen's fellow magistrates during the Qianlong period of the Qing Dynasty:

"Using extremely fine wheat flour, sugar and sesame seeds to make round cakes, some with salt and pepper, some with white sugar. It tastes sweet and moist, and is famous far and wide."? 3. Sanbaijiu In the old days, Wuzhen's brewing industry was very developed, with more than 20 brewing workshops in the Ming Dynasty.

Among them, Gao Gongsheng, Shunxing and Yongsheng are the most famous.

Now only Gaogongsheng Zaofang remains, formerly known as Gaogongsheng Jiangyuan, which was built in the early Ming Dynasty.

The "Wuzhen" Sanbaijiu produced is famous for its rich aroma, mellow taste, soft entrance, refreshing aftertaste and lingering fragrance. It has been popular in the Jiangnan area for hundreds of years and has been long-lasting. It was once listed as a royal wine.

The tribute is known as the wine of Wuzhen people.

4. White chrysanthemum tea White chrysanthemum, also known as white chrysanthemum and chamomile, is a traditional cultivated medicinal plant in my country and one of the famous "Zhejiang Eight Flavors" medicinal materials in Zhejiang Province.

The currently developed Hangzhou Baiju series products include: chrysanthemum liquor, chrysanthemum crystal, chrysanthemum tea, etc.

The white chrysanthemums in Wuzhen have as white as jade petals and golden stamens. They are paired with beautiful utensils and are delicious in tea. The use of flowers in food is also a major feature of Wuzhen.

?5. Silk cotton Wuzhen is the hometown of sericulture and the center of the silk palace. The silk cotton produced is soft and firm, without lumps, tendons or impurities. It is white in color and as thin as paper.

The locals call silk cotton "big ring cotton" or "hand cotton". Its lightness, warmth and breathability are incomparable to modern "space cotton".
