But because tofu is so common, it is more often used to stew cabbage, stew fish, mix with green onions, etc.

One raw material for tomato fried tofu: 400 grams of tofu, one tomato (about 200 grams), a little green onion, a small piece of ginger, two cloves of garlic, four millet peppers, a few chili peppers, one tablespoon of bean paste, one tablespoon of cooking wine, and one soy sauce

Steps: 1. Cut tomatoes into small pieces, slice onions, ginger and garlic, and cut red pepper into shreds and set aside.
2. Cut the tofu into square slices, about 1 meter thick.
Be careful not to cut it too thick, otherwise it will age easily after oiling.
3. Heat the iron pan, add oil and fry the tofu until the skin is crispy and golden.
Be careful not to turn the tofu until it changes color.
Fry the tofu and set aside.
4. Leave a little oil in the pot, add ginger, garlic, Sichuan peppercorns, and chili peppers and stir-fry until fragrant, then add bean paste and cooking wine and stir-fry evenly.
5. Stir-fry the tomato juice first, then stir-fry with soy sauce.
Put half a small bowl of water and bring to a boil.
Add the fried tofu, stir evenly until the soup becomes dry, and remove from the pot.
Note: Finally, when frying tofu, pay attention to the changes in the soup.
It is best to leave half a bowl of soup in the pot before thickening with starch.
If the soup is not red enough before thickening with starch, you can add some tomato paste for color.
Minced Pork and Tofu Egg Pancake 2 Ingredients: 2 eggs, a little minced meat, a small piece of tofu, 1/2 teaspoon of salt, 1 tablespoon of cooking wine, 1 tablespoon of soy sauce, a little pepper, a little flour, 1/2 teaspoon of sugar, some chopped green onion

Steps: 1. Prepare eggs, minced meat, tofu, and chives.
2. Add seasonings to the minced meat, stir evenly in the same direction, and add minced tofu.
Stir evenly, sprinkle with green onions, and mix evenly.
3. Crack the eggs into a bowl, add 1/4 teaspoon of salt, and stir evenly.
Add a little flour and stir until there are no lumps.
4. Brush the pan with a thin layer of oil, turn on low heat, pour half of the egg batter, turn the pan and smooth the bottom.
5. When the bottom of the egg pancake is fried and the surface has just begun to solidify, spread a layer of minced meat and tofu in the middle.
6. Then use a spatula to fold the egg skin side over the minced meat.
Fold the egg skins on both sides towards the middle.
Fold the last side into a rectangular egg roll and press gently with a spatula to shape.
Fry over low heat until cooked.
Note: Be sure not to add too much flour. The egg batter should be thinner and fried to create a thin layer of egg skin, which is easy to roll without cracking.
When the egg skin has just solidified, spread the minced meat on the surface, so that the egg skin can stick firmly after being rolled up.
You can also spread pure egg crust directly without adding flour.
