Summer home cooking recipes: ants on the tree, sweet and sour spareribs, preserved egg lean porridge, minced eggplant, steamed spareribs with lobster sauce and ginger sauce.
1. Ants climb the tree
Soak the vermicelli in cold water and take it out. Chop the carrot and green pepper, and chop the ginger and onion. Stir-fry a tablespoon of red bean paste with low heat, stir until the shovel oil is red. Stir-fry minced meat until it turns white, add a teaspoon of sugar, add carrots and minced ginger and onion. Add water just to the edge of minced meat and add vermicelli. Boil it, the water is almost dry, turn the juice with a shovel, add green pepper, chicken essence, sesame oil and turn off the heat.
2. Sweet and sour spareribs
Blanch the spareribs, then rinse with boiling water. Drain, add salt, cooking wine, soy sauce and shredded onion and ginger, mix well and marinate for 5 minutes. Steaming the ribs in a pressure cooker, turning off the heat 4 minutes after boiling, and taking out the ribs when the pot is cool. Boil sugar, vinegar and tomato sauce in a hot pot with low heat. When the soup in the oil pan is thick, stir-fry the ribs until the juice is hanging, sprinkle the sesame seeds and turn off the heat.
3. Preserved egg lean meat porridge
Cut the preserved egg into pieces, add salt and sesame oil to the shredded pork, mix well and marinate for 1 minutes. Wash rice and soak in salt and sesame oil for 1 minutes. Put the shredded pork in a hot oil pan until it changes color, and then remove it to control the oil. Boil the water, add rice, bring to a boil, then reduce the heat, add preserved eggs, shredded lean meat, salt, chicken essence and chopped green onion, cook for about 5 minutes, then add the remaining preserved eggs and chopped green onion, and simmer for 1 minutes.
4. Eggplant with minced meat
Eggplant is washed and cut into 6 cm long sections, and then cut into 4 strips. Heat an appropriate amount of oil in the pot, add eggplant and fry it in medium heat until soft, then take it out. Leave the oil in the pot, add the ground meat and stir-fry, then add the minced garlic, onion slices and shredded ginger and stir-fry until fragrant. Pour the fried eggplant into the pot, add seasoning and stir well.
5. Steamed ribs with fermented soybean and ginger sauce
Wash fermented soybean, drain and chop. Peel ginger, grind it into ginger paste, peel garlic and cut it into rice grains. Put the ground ginger and garlic into a bowl, add all the seasonings and mix well. Wash the ribs and drain. Add 1 tablespoon of cornflour, then add the evenly mixed seasoning and stir well. Put it in a pot, cover it with high fire and steam for 15 minutes until it is fully cooked.
