pigskin jelly
Ingredients: pigskin, cinnamon, star anise, cooking wine, ginger, green onion

1 kg, fresh pigskin. First, roast the excess pighair on the surface with fire, put it on the chopping board, and remove the fat and grease from the pigskin with a knife. Just scrape it again and again.
2. Sprinkle some salt on the pigskin, scrub it clean, then put it in a pot with cold water, add 1 piece of cinnamon, 2 star anise, 1 teaspoon of cooking wine, 3 pieces of ginger and 3 pieces of onion, and bring it to a boil over high fire.
3. After the water is boiled, keep it on medium heat for 1 minutes. This will not only remove impurities from the pigskin, but also soften the pigskin, so it won't be too difficult to cut with a knife.
4. After the pigskin is cooked, check it again to see if there is any residual pig hair. Use tweezers and other tools to try to pull it out, and then scrape off the fat part.
5. Cut the skin into shreds and put it into a pot, add a spoonful of salt, rub off the excess oil repeatedly, rinse it with clear water twice, and rub the skin with both hands. After this treatment, the jelly boiled again has no peculiar smell.
6. Put the skin into the pot, add 3 times of water to the skin, bring it to a boil, and simmer for an hour and a half on low heat. Remember that it seems to be in a different state, so don't worry about boiling. During the whole boiling process, it is enough to add half a spoonful of salt, rather than salty.
if you want to add other ingredients, such as peanuts, shredded tofu, etc., put them 2 minutes before you leave the pot.
7. This is the stewed soup. When it is cold, it will be transparent. Pour the soup into a container, whether it is a basin, a bowl or a square plate, and put it in the refrigerator for 4 hours.
8. When the time is up, when you eat it, cut it directly into cubes. It is nutritious and appetizing, and it is not greasy.
