Salty delicacies 1. Yellow mud snail.
Fresh mud snails can be added with scallion oil or soup, and they are both delicious.
But in Ningbo, the most authentic way to eat it is drunken yellow mud snail.
The mud snails that have spit out all the sediment are marinated in salt and wine. The taste is crispy and delicious, and the salty aroma goes well with rice.
2. Smelly winter melon.
The old-fashioned stinky winter melon is also relatively salty. When I was a child, my grandma would eat a piece of transparent stinky winter melon from the jar for a long time.
It's hard to describe the slightly stinky taste mixed with a bit of fermented umami and the fragrance of winter melon.
3. Amaranth tubes.
As one of the three stinky dishes, this dish is almost lost now, at least I haven’t had it for a long time.
The outer skin of the smelly vegetable tube is hard, but the inside of the vegetable tube is soft and fragrant. It is very delicious with a bowl of clear porridge.
4. Roast at the faucet.
After drying the shrimps (tofu fish), Ningbo people usually fry them and make them into faucet grills.
The faucet roasted in the shape of a small dragon is the taste that many Ningbo people remember.
Of course, the old-style faucet grill is also relatively salty.
I went down to eat two bowls of soaked rice, but I still haven’t finished eating one of the faucet grilled rice.
5. Sauce tofu.
Ningbo people like to call bean curd sauce tofu.
When I was a child, I liked to eat red bean curd, but now it seems that white bean curd is the most popular.
Fermented bean curd, which has a rich aroma and is delicious when eaten with rice, was also one of the go-to rice dishes when I was a kid.
6. Pickled cucumber.
Slice the pickled cucumber and mix it with a little sesame oil, and the black pickled cucumber will turn into a delicious dish.

In Ningbo, many people have eaten steamed pork with cuttlefish eggs or steamed cuttlefish eggs.

The salt-grilled bamboo shoots made from fresh and tender lamb tail bamboo shoots native to Ningbo are very delicious.
Basically, everyone in Ningbo eats dried bamboo shoots in summer.
Wash, drain and tear open, add sesame oil on it, and it's a side dish for meals.

10. Salted catfish.
Fresh anchovy is bright and delicious, but it has an annoying drawback. The fish bones are very thin and numerous, making it very troublesome to eat.
Many vegetable markets in Ningbo sell salted catfish. One is that it is convenient to preserve fresh catfish that is prone to spoilage, and the other is that pickled and moldy salted catfish has a very unique taste.
Generally, people who are not used to it will think that salted catfish is just a smelly fish that has gone bad, fishy, ??salty, and looks very unsightly.
But after being steamed in a pot, the fresh and fragrant taste is really intoxicating. Even the nasty fish bones are fermented until they are crispy and soft, making it a very delicious dish to go with rice.
11. Salty.
There is an old saying in Ningbo that goes, "If you don't eat salty glutinous rice soup for three days, your foot bones will feel a little sore."
