Chungju fermented bean curd began in the Tang Dynasty and flourished in the Qing Dynasty. It has been flourishing for more than a thousand years. The strains used are isolated from the mold house that was opened in the 12th year of Yongzheng in the Qing Dynasty (1734). Obtained, its enzyme diversity and decomposition power are unique to China.
