Qingming Festival is coming soon. A familiar delicacy for every household in Wenzhou is Qingming Cake. Qingming Cake has a long history in the Jiangnan area. Because it is made of wild vegetables, it is also called cotton vegetable cake.
Every time I go to visit a tomb, I always see the Qingming cakes that my aunt puts out on the street. They taste so fragrant and glutinous that I really want to eat them when I think about it. This time I tried making Qingming cakes myself, and I didn’t expect them to be quite successful.

Preparation materials: glutinous rice flour, cotton vegetables (the main ingredients of Qingming cake), general flour, water, salt, grapefruit leaves. Fillings: bamboo shoots, dried tofu, pork, green onions (you can also add some pickles, carrots, etc., it depends on the individual)
Like to put) Step 1: First wash and blanch the cotton cabbage, then grind it into slag in a food processor.
Step 2: Mix glutinous rice flour and general flour in a ratio of 3:1, add a little salt, then add cotton cabbage into the flour and knead it into a dough. Add an appropriate amount of water during the kneading process. It mainly depends on whether the dough can be kneaded into a round shape.
, remember not to make it too hard. Just press the dough into a Q-bounce state. If the dough is too hard, it will not be able to wrap the fillings.
Step 3: Fry the fillings.
After adding oil to the pot and heating it, put the prepared fillings into the pot one by one and stir-fry. Finally, add the green onions, add cooking wine, salt, etc., stir-fry until cooked.
Step 4: This step is also the most critical step. Knead the dough into small circles, then evenly shape the small circles into a bamboo hat shape, wrap the filling in, and then close.
After wrapping, place it in a pot over high heat and steam for 15-18 minutes. Do not turn on the pot during the steaming process. Let it simmer for one minute and then it will be out of the oven.
