A pot of ginger vinegar, from cooking vinegar to eating, took last month. After repeated boiling with ginger vinegar, the vinegar is sweet but not sour, the ginger is tender but not spicy, the trotters are tender and greasy, and the eggs are firm, chewy, sweet and delicious.
Ingredients: sweet vinegar, brown sugar, ginger, eggs, trotters.
Ginger needs to be peeled, sliced and dried in a ventilated place for 2 days to dry the water. Or stir-fry in a pot. After the ginger skin is dried, it can be boiled, washed and soaked in feet, which has the effect of dispelling wind and keeping warm.
The practice is as follows:
1, put the sweet vinegar into the pot, boil it with slow fire, and turn off the fire. (Repeat once a day for about half a month. )
2. Add brown sugar to boil, and turn off the heat after the sugar melts. (Bring to a boil with low heat once a day and repeat for 2-3 days. )
3. Put the ginger slices into the pot and bring to a boil. (Boil on low heat every day and repeat for 7-8 days. )
4. Take another pot and boil it with water. Soak pig's trotters in water, remove, cool, remove and drain for later use.
5. Put the boiled and shelled eggs into the pot and cook them slightly, then put them into the pig's trotters. Cook the trotters until they are tender, then turn off the heat and put them in a bowl.
