prepare ingredients; 4g of yuba, half a tomato, 5g of oyster sauce, 4 fungus, 1 green pepper, 1 red pepper, 2 kg of cooking oil, 1 onion and 3 cloves of garlic. 5 dried red peppers, 5g Chili sauce, one egg, a small cup of corn starch, a spoonful of flour, 5g chicken powder, 5g pepper and a spoonful of sugar.
manufacturing steps;
1. Prepare about 4g of yuba soaked in advance, cut it into 5cm long sections and put it on the plate for later use.
2. remove the inner pulp of one green pepper, cut it into rhombic pieces and put it in a small pot, cut one red pepper into rhombic pieces and put it together with the green pepper, cut half a tomato into thin slices, and cut a few soaked auricularia into small pieces and put them together in a material bowl.
3. Cut a few pieces of garlic into pieces, cut a piece of green onion into horseshoe pieces, and then grab some dried red peppers and put them in a pot for later use.
4. prepare a small pot, add corn starch and flour, stir by hand, add a little water and stir in one direction until the consistency can be drawn.
5. then pour the yuba into the pot and thicken it, and stir it evenly by hand for later use.
6. When all the ingredients are ready, we start cooking. We will burn oil in the pot and turn to medium heat when the oil temperature reaches 5%, and put the thickened yuba into the pot one by one.
7. Avoid sticky yuba, push it with a spoon to heat it evenly, remove the starch residue from the colander, and remove the oil control when the yuba is fried to golden brown and crisp.
8. add a little cooking oil to the pot, add onion, garlic and dried red pepper until fragrant, add 5g of Chili sauce and stir-fry until it melts, then add the cut side dishes, continue to stir-fry over low heat, stir-fry the juice in the tomatoes, and then add 5g of oyster sauce and stir-fry. Pour in proper amount of water, add salt, chicken powder, pepper and sugar, stir-fry and melt all seasonings.
9. Cook until the soup boils, add a little water starch, slowly drain the soup, then pour in the fried yuba, stir fry quickly and evenly, and plate.
