My hometown is located in Dengzhou, Henan, an ancient city at the junction of Henan and Hubei.

1. The first one on the list is definitely the must-have New Year food for northerners - dumplings.

We Han people usually have a meal of dumplings during the Xiaohan season.

The fillings are mainly pork, cabbage, pork and green onions.

My favorite is the mutton dumplings made by the Hui brothers.

When you bite open the dumpling wrapper, the soup is full, and then you see a small meat ball.

We are also particular about how to eat dumplings.

There are two types of so-called eating dry or with soup.

To eat them dry, take out the dumplings, drain them and put them on a plate. Add balsamic vinegar and chili oil to a small plate for dipping.

The dumplings with soup are called sour soup dumplings, which are made with minced chives and coriander and their respective seasonings added to the dumpling soup to make it hot and sour, and the dumplings are added directly.

Eat it with soup and dumplings.

How to eat lotus root: The most common way for Henan people to eat lotus root is to eat lotus root slices in cold sauce.

But we also love another way Hubei people make it, which is lotus root soup.

Blanch pig's feet, ribs or keel bones (all three are acceptable), add them to a casserole and simmer over low heat for an hour, then add large pieces of lotus root.

Continue simmering until the bones are crispy, the meat is tender, and the lotus root is soft.

Season immediately and serve.

Everyone has a bowl and enjoys it.

It tastes sweet but very nourishing.

It is also a seasonal delicacy during the Xiaohan season.

It is the most common cold-repelling product during the minor cold season.

We often go to the halal market to buy trimmed lamb.

Buy another sheep skeleton.

When you get home, chop the lamb skeleton into small pieces.

As for slow cooking in the pot.

Simmer until the soup is milky white.

Place the whole piece of lamb into the pot and continue cooking.

When it's time to serve, add the respective seasonings to a large bowl.

Remove the cooked lamb and cut into thin slices.
