There are various styles of rice covered with Sichuan style pork, which is delicious. Here is a personal favorite.
1. Prepare a piece of pork belly, burn the fine hairs on the surface of pigskin with a fire, and then put it under flowing clean water to scrape it clean.

Put the ginger, onion, pepper, fragrant leaves and cinnamon in a pot with cold water, and cook it over high fire.
Prepare several cloves of garlic, pat them flat, then chop them, and then cut some ginger slices. Cut off the roots of garlic seedlings, pat them flat, and then cut them into sections with an oblique knife.

Heat the pot, add the sliced meat, stir-fry over medium heat until the sliced meat rolls up slightly, and then add the ingredients and stir-fry over low heat to make it fragrant.
