eels
1. Animals
Alias: white eel, white eel, river eel, eel, green eel, wind man and Japanese eel.
eels are the meat or whole of eels belonging to the family Anguilla. Eel is a kind of fish, which looks like a snake, but has no scales. It is generally found in the waters bordering fresh water in Yu Xian. Mainly distributed in China Yangtze River, Minjiang River, Pearl River Basin, Hainan Island and rivers and lakes.
There are 18 species of eels in the world, among which there are four families of Japanese eel, perch eel, Celebes eel and short fin eel in Taiwan Province, but only Japanese eel is the most abundant, and the other three species are rare. They have lived on the earth for tens of millions of years, but our understanding of them is only in recent decades. For example, its real spawning ground was discovered in 1991. Its sex was originally controlled by environmental factors and density. When the density was high and food was insufficient, it would become a male fish, and vice versa. In the rivers of Taiwan Province, because the number of eels is very small, most of them are female fish.
Eel fry can't be cultivated by artificial propagation, mainly because eels have a very special life history, and it is difficult to simulate them in artificial environment. Japanese eels grow up in freshwater rivers and become adult eels. In summer, they begin to migrate to the sea, that is, they swim from rivers to the ocean to lay eggs, which is just the opposite of the upstream migration of trout and salmon from the middle reaches of the ocean to the rivers to lay eggs. Its spawning grounds are thousands of kilometers away in the deep sea between the Philippines and the Malaysian Isles. Scientists found that this spawning ground was mainly because a lot of newly hatched larvae were collected here.
The larva of eel is about 6 cm long and weighs .1 g, but its head is narrow and its body is tall, thin and transparent like a leaf, so it is called "willow fish". Its body fluid is almost the same as seawater, so it can be transported with ocean currents for a long distance with little effort. It takes about half a year for the Kuroshio current to drift back from the spawning ground and then back to the seashore of Taiwan Province, and it began to metamorphose into a slender and transparent eel line, also known as "glass fish", one month before reaching the shore. Therefore, from December to January every year, fishermen will be busy catching eel lines that are going back to the river with hand-fork nets on the coast near the estuary and selling them to farmers. After farmers bought it back and stocked it, the color slowly appeared, turning into yellow young eels and silver adult eels. Under natural conditions, the largest individual that can be caught is 45cm and weighs 16g.
eels spawn in the deep sea and grow in the fresh water environment. Fierce temperament, gluttony, active, staying up all day and coming out at night, strong optical rotation, like running water, so warm.
Adult eels grow fast, with round and round appearance, like a cone, dark color and attractive appearance. In recent years, they have been cultured artificially, and their meat is crisp. This fish is common all year round, but Xia Dong is the most delicious in two seasons. Eel is rich in nutrition, delicious, with less thorns and more meat, and has the functions of cooling off summer heat, nourishing and strengthening the body.
In addition, Monopterus albus, which belongs to Compositae, fish and snake, has no scales and yellow abdomen, so it is named Monopterus albus. Monopterus albus was born in a mud cave in a pond or on the bank of a freshwater river, so it is difficult to live without water. When caught, it is covered with saliva and foam. Monopterus albus is not only a delicious food with tender meat, but also has been recognized for its nourishing and medical functions since ancient times.
Eel refers to the general name of species belonging to the classification of Anguilla. Also known as eel, it is a kind of fish that looks like a long snake and has the basic characteristics of fish. In addition, eels have migratory characteristics similar to salmon.
Common species
European eel
American eel (Anguilla rostrata)
Japanese eel (white eel; Anguilla japonica)
Australian eel (black eel; Anguilla Australia)
African eel (Anguilla mossambica)
Perch eel (Anguilla mormorata)
Philippine eel (Anguilla mormorata)
New Zealand eel (Anguilla dieffenbachi)
Indonesian eel (Anguilla bicolor). Pacific)
Distribution
Eels all over the world mainly grow in tropical and temperate waters, except for Anguilla anguilla and Anguilla rostrata, which are distributed in the Atlantic Ocean, the rest are distributed in the Indian Ocean and the Pacific Ocean.
life history
eels grow in rivers on land, migrate to spawning sites in the ocean after maturity, spawn only once in their lives, and die after spawning. This life style, contrary to anadromous salmon, is called catadroumous salmon. Its life history is divided into six different development stages, and in order to adapt to different environments, the body shape and body color of different stages have changed greatly: egg-stage: located in deep-sea spawning ground.
leptocephalus: In the ocean, it drifts with ocean currents for a long distance. At this time, its body is flat and transparent, as thin as willow leaves, so it is convenient to drift with the current.
glass eel: when approaching the coastal waters, the body is streamlined, reducing the resistance to get rid of the strong ocean current.
eel line (elvers): When entering the estuary waters, melanin begins to appear, but it also forms the catch source of eel fry in aquaculture.
yellow eel: During the growth of the river, the belly of the fish is yellow.
silver eel: When it matures, the fish body turns silvery white, which is similar to deep-sea fish. At the same time, the eyes become bigger and the pectoral fins are widened to adapt to swimming back to the deep sea to lay eggs.
The sex of eels is determined by the acquired environment. When the number of groups is small, the proportion of female fish will increase, while when the number of groups is large, it will decrease. The overall proportion is conducive to the increase of groups.
dishes
Japanese dishes often use freshwater eels (ぅなぎ; Unagi) and sea eel (Kangji eel; Conger eel, anago)。 Eels are also often used in Cantonese cuisine and Shanghai cuisine. European eels and other freshwater eels are eaten in Europe, America and other places. A traditional London dish is jellied eels.
similar species
Spineel and halosaur in Notacanthiformes are also very similar to eels.
these deep-sea fishes used to belong to the suborder Albuliformes. Electric eel is not an eel, but is similar to catfish. Real eels belong to the class Anguilla of bony fishes.
Others
Only Britain in Europe can legally catch eels by throwing nets by hand. For thousands of years, hand-throwing nets have been used to catch eels in River Parrett and River Severn in England.
