Mei Cai Pork
Ingredients: 1000g pork belly, 150g prunes, 150g broth, 10g starch, 30g sugar, 30g dark soy sauce, garlic A few cloves, a small piece of ginger, 1 star anise, 1 grass fruit.
Method:
1. Wash the prunes and soak them in water for 30 minutes;
2. Add ginger, star anise and grass fruit to the pork belly, and add them to the water. Cook for 30 minutes;
3. Heat oil in a pan, add cooked pork belly, fry one side of the pork skin until golden brown, then add dark soy sauce to color;
4. Cut the meat into slices of about 1 cm;
5. Place the meat skin side down in a bowl;
6. Heat oil in a pan, sauté minced garlic and star anise until fragrant, add Add the plum vegetables and sugar and stir-fry evenly, add the broth and cook for 5 minutes;
7. Cover the meat with the fried plum vegetables, put it in the basket and steam over high heat for 1 hour.
8. Pour out the juice from the steamed vegetables, and pour the plum vegetables and meat into a plate. Add a small amount of starch to the original juice to thicken it and pour it on the meat.
