Method: 1. Cut chicken legs and potatoes into pieces, and cut dry chili peppers into sections.
2 Pour the chicken pieces into boiling water and blanch them, remove and set aside.
3 Heat the oil in the pot to 70-80% heat, add the ginger slices, chili peppers, and green onions, and stir-fry until fragrant.
Fry the chicken pieces for 4 times and add cooking wine. Add potatoes and fry together, add soy sauce to adjust color.
5 Stir well and add water. Bring to a boil over high heat and then reduce to low heat for 20 minutes until the soup thickens.
6 Add sugar, salt and green onions, stir-fry and take out.
