Composition for the second unit of the second volume of the sixth grade: Puning Dried Tofu

Puning Dried Tofu is a Han folk snack and one of the specialties of Puning City, Guangdong Province.

Soy products made from soybeans as the main raw material and mixed with potato starch, gypsum and brine.

The first people to make dried tofu were people from Guangnan Village, Liaoyuan Street, Guangdong Province. They learned to make dried tofu as early as the early Ming Dynasty.

At the end of the Yuan Dynasty, heroes arose everywhere, and the Central Plains was in chaos.

Later, Chen Youliang was defeated by Zhu Yuanzhang, and his military advisor He Yeyun (known as Lice Mother Fairy), who knew science and geography, lived in the Puning area and helped the Puning ancestors choose land to build houses, build village gates, and build tombs.

After the death of Beishan Xu, the grandmother of the second generation of the Chen family in Guangnan, Liaoyuan Town, it happened that the local master He Yeyun lived here, so the descendants asked him to find a place to build their grandmother's tomb. Later, they chose the site on Pingbodi Mountain in Tieshan, which was named

"Beauty presents flowers."

Because of the warm hospitality of the host.

I feel the host's hospitality and want to repay the favor again.

After the completion, He Yeyun mysteriously asked the owner: "According to the geographical characteristics of Guixiang and the Feng Shui aura of the ancestral tombs, the descendants of Guixiang will definitely have many officials and nobles in the future. I don't know, do you want to have thousands of officials every day, or one every three years?"

Without thinking, he casually replied: "Of course, it would be better to have a thousand officials in one day." He Yeyun calculated with his fingers and realized that it was a secret, and sighed with regret.

Therefore, based on the local resources, water and soil characteristics, he taught the Guangnan villagers the technique of making dried tofu (the pronunciation of "Qian" in Chao is the same as "official"), in order to fulfill the saying of "the sun rises and thousands of officials".

The main raw materials of dried tofu are soybeans, potato starch, gypsum and brine.

The process flow is: soaking beans, grinding pulp, removing slag, boiling pulp, testing powder, adding gypsum powder, sprinkling brine, briquetting, sealing, briquetting cloud acid water, cooking, etc.

Among them, the soaking time of beans must be timely, otherwise it will affect the quality of dried beans; the temperature of soybean milk test powder and the mixing of gypsum must be accurate, and different temperatures should be controlled according to different powder qualities, otherwise the whole thing will be ruined; sprinkling brine must also be timely;

Water quality is the most important factor that determines the quality of dried tofu.

Perhaps this is the secret, the scientific truth.

Interestingly, after the production of authentic Guangnan dried tofu is completed, there is a small concave square seal in the middle of each piece of dried tofu, symbolizing the official seal.
