Big fish and big meat are not considered delicacies. Fried vermicelli in Fuyang area is also a popular delicacy among the locals.
Fuyang is located in the Huaibei Plain and is rich in vermicelli. When processing vermicelli, take the vermicelli just out of the pot into a basin and cool it to become "top powder". Cut the tofu into thin slices, add cooking oil, salt, green onions, ginger, etc. to a pot and stir-fry for a few minutes. Take it out of the pot and put it on a plate, and it's a delicacy.
Another way to make vermicelli; soak dry vermicelli in hot water until soft, remove and cut into sections, add a small amount of flour to the pot, add oil, salt, onion, ginger and other seasonings, stir-fry for a few times Minutes are enough.
Two kinds of flour products are delicious. They taste soft and chewy. Once you eat them, you will never forget them.
To be honest, Fuyang is not a place rich in food. Not to mention nationwide, even in Anhui or even northern Anhui, Fuyang’s food is not very famous and distinctive, although I am also half Fuyang. .
As the saying goes, if you rely on the mountains to eat, you will eat the sea. Of course, Fuyang is not close to the sea. There is also a lack of large water bodies in the territory, and there is not even a real mountain.
All this means that Fuyang is not destined to be a foodie. Huainan, also in northern Anhui, has beef soup and tofu, while Suzhou has Xiaoxian mutton and Fuliji roast chicken.
Some people will say that Fuyang also has delicacies, such as Fuyang Gratiao, pillow steamed buns, etc., but does anyone know about these delicacies outside of Fuyang?
To be precise, the above delicacies are all staple foods. There are not many delicacies that exist as dishes. I know that the more distinctive one is "pink chicken".
In fact, sometimes pink chicken is not chicken, not even chicken, and it is not a stir-fry but a soup.
Because I am the son-in-law of Fuyang, I come to Fuyang every year. When I heard about this dish for the first time, I thought it was some kind of special chicken. However, after waiting for a long time, I didn’t see the chicken. Finally I found out that it was on the table. One of the dishes with soup in a bowl is pink chicken.
Most of the time, pink chicken is made of pork. Stir the shredded pork with corn starch or flour. There should be other seasonings. Then knead it into small balls with your hands and put it in the pot to cook the soup. Take it out of the pot. Sprinkle with pepper and coriander. I haven't eaten pork for many years, so I don't know what it tastes like.
Although I don’t eat pork and this dish, over the years in Fuyang, this dish is definitely one of the locals’ favorite home-cooked delicacies.
In addition, the local preserved eggs are also very different. The preserved eggs here are yellow, directly poured with vinegar and minced garlic, and sometimes a little mint leaves are put inside. The taste is quite good. . Speaking of mint, I have to say something. I only learned in Fuyang that mint leaves can also be eaten, and they can be eaten cold and raw. Of course, they taste good, and the locals also like to eat this dish.
Finally, let’s talk about the glatiao. The burritos in Fuyang don’t seem to be very delicious. I have never tried the pillow buns, so I can’t comment on them, but these are snacks and staple foods, not strictly dishes!
Gratiao is not a dish. It is a staple food similar to Wuhan hot dry noodles. The preparation and taste are very similar. Use relatively thick noodles, cook them and mix them with sesame sauce, then add some soybean sprouts and cucumber shreds. It seems like this, but I quite like it.
My experience in Fuyang over the years is that Fuyang people don’t pay much attention to or pursue food. They don’t have many requirements for knife skills, cooking skills, decoration and presentation, as long as it is edible and the portion is sufficient. , not seeking exquisiteness but seeking benefits.
Eating in Fuyang is relatively affordable. Generally, the portions of hot and cold dishes in restaurants are generous, but the appearance and taste are another matter.
I have never tasted anything very delicious in Fuyang in the past few years. As for the local specialties, I can’t really name them except pink chicken.
In addition, my wife doesn’t eat fish heads there. I heard from her that in the past, no matter how big the fish head was, they would just throw it away, and they didn’t eat salty food there.
When I got married, it was the first time for her family to eat soup made from white fungus that was not sweet, and soup made from pig's trotters.
Generally speaking, there are only a handful of foods that I like in Fuyang. I have to say that the most unforgettable one is the glatiao, because it is really delicious.
I am a native of Fuyang, Anhui. Is there still a smell of the past there? When I was a kid, I ate one of Lao Zhu’s meat buns and a bowl of Gulou’s spicy soup. That is a fairy-like enjoyment. As a person born in the 1960s, I have eaten a lot of delicacies from various parts of China and Fuyang. Let me just talk about the delicacies of Fuyang: Braised Chunxiang Pisi, Chengjia Roast Chicken, Laohuang Pan Chicken, Urinal Beef, Dongfang Guanliji Beef Box, Laobeiguan Haojia Oil Tea, Qingyun Street and Dawei Shou’s salty sesame paste. The braised soft-shelled turtle at Dawei's head and the light numbing paste outside Xiguan Suspension Bridge. There are also noodle broad beans, flatfish, and lotus beans sold along the street. Lao Wen noodles, dumb wontons and jelly, Sanfu Street wontons. The vegetable farmers in Quanhe Qiaobei sell fried rice noodles, Kouziji’s salty rice noodles and Huiliuji’s twists, tofu skin, beef and skewered steamed buns and salty rice noodles. Dongguan Hong’s mother’s pink chicken and the beef offal soup next to the diesel engine factory are also good. There is also Laodong Tianchun's mixed pork and silk noodles, with at least ten or twenty kinds of ingredients. The list goes on and on. . . . Nowadays, society has developed, people are smarter, and the ingredients are different from the past. Of course, the taste cannot be said, and the eater's nature has also become a fascinating fascination. . . . .
The top ten delicacies in Fuyang include: pink chicken, Taihe mutton noodles, glatiao, steamed buns, dead-faced pancakes, spicy paste, egg white meat, flower-cut beef soup, Caoji clams, rolls Steamed buns baked in water.
