When visiting Datian County, the enthusiastic host may invite you to chew pig bones.
Shipai Town, a small mountain town, has seven or eight restaurants specializing in pig bones. When the guest comes in, the store doesn't even ask, just fill in a plate of pig bones on the menu, and then ask what else to order. Soon, a plate of steaming pig bones was served on the table, and it was chewed, well, not bad; Chew again, wow, great! The meat is full of fragrance and has a long taste. Eat one or two bones of it first. If you feel that you need to adjust your taste, the sauce vinegar is prepared in the small dish next to you. You need shredded ginger, minced garlic or Chili, and add it yourself. After that, you can dip the bones and eat them, which is another realm.
On a hot day, when eating pig bones in Shipai Town, the store must provide diners with a pot of radish soup. Summer is not the season for radish production, needless to say, it is an anti-season vegetable, but the difference is that the anti-season vegetables in Datian grow in the natural environment. In Wuling Township, Datian County, there is a mountain with an altitude of more than 1,4 meters, named Snow Mountain. The radish produced there is famous for its big, crisp fruit and sweet juice, and the relatively cool climate makes radish produced here in summer. After the boiled pig bones are fished out, the boiling soup in the pot is used to cook shredded radish. When the shredded radish and bone soup are cooked together, the greasy taste in the soup is absorbed and becomes particularly sweet, so the shredded radish is mellow, and it is a good dish without any seasoning. Radish can clear away heat, relieve internal heat, relieve constipation, and harmonize yin and yang with greasy pig bones, which is a perfect match.
In the past, people in Datian ate pig bone meat by picking off the meat attached to the bone with a knife. Later, people tried to put the whole pig bone directly on the plate and let the diners chew it themselves, which made the diners addicted, not only the taste of the knife disappeared, but also the strange fragrance of the bones could be chewed out. Moreover, eating meat in large chunks and drinking in large bowls seems to show the heroic style of mountain men. (Wen Jing)
