What kind of delicacy is cold peanuts?

How to do it?

A common cold dish at home in summer is cold peanuts. It has a crisp and tender texture and moderate saltiness. You can have it whether you are eating it by yourself or entertaining guests. It is easy to make and delicious.

For people who love drinking, it is also a good dish to drink with wine. Today I will share how to make it.

Ingredients: peanuts (it is recommended to choose larger and plump ones), celery, carrots, onions, star anise, cinnamon, bay leaves, pepper, fennel, ginger, and white sesame seeds.

Method: The first step is to process the peanuts: We wash the peanuts, and then soak them in water for about 3 hours to make them fuller after absorbing water. You can also add an appropriate amount of salt when soaking, so that the peanuts can taste better.

The second step is to process the side dishes: cut the celery, carrots and onions into small dices; slice the ginger; prepare appropriate amounts of spices.

Step 3: Cook the peanuts: Add the soaked peanuts and water to the pot, add an appropriate amount of salt (add a little less after you taste the salty taste), add spices and ginger slices and start cooking (open the lid and cook), after the water boils

Cook for 10-15 minutes. You can taste it from time to time. If it suits your taste, you can remove the water and control it. If you like it heavier, you can turn off the heat and soak it again.

Step 4: Blanch the side dishes: Boil water in a pot, sprinkle salt after the water boils, and wait until it tastes salty. First add the diced carrots and blanch for 30 seconds; then add the diced celery and blanch for 30 seconds; finally add the diced onions.

Blanch until it becomes transparent, then drain all the water and set aside.

Step 5: Prepare the cooked peanuts and remove the spices one by one. (If you put the spices in tea bags or seasoning bags, you can skip this step.) Put the peanuts and diced vegetables into a bowl.

In a larger basin, add appropriate amount of salt, chicken essence, steamed fish soy sauce (a small amount), sesame oil (add less sesame oil, if you don't like sesame oil, you can add a little cooked oil), cooked sesame seeds, mix well and serve on the plate.

The uneaten portion can be put in the crisper before eating next time, but remember to finish it as soon as possible.
