1) Wash the trotters. Pour clean water into the pot, bring to a boil with high fire, blanch pig's trotters for 5 minutes, remove, rinse and drain for later use. But we usually buy pig's trotters in the supermarket, and the hair has been removed very cleanly)
2) Peel the ginger and cut it into pieces. Cut the onion into 5cm long pieces. Peel the garlic and pat it with a knife, but don't break it.
3) Pour the oil into a non-stick pan. When the oil is heated to 50% heat by fire, pour in onion, ginger, garlic, star anise, pepper, dried tangerine peel, tsaoko, cinnamon, fragrant leaves and dried Chili, stir-fry until fragrant, add pig's trotters, and then add cooking wine.
4) Pour in soy sauce and soy sauce, and turn the pig's trotters with a shovel to make the color of soy sauce evenly cover the pig's hands. Pour boiling water, add sugar, cover and simmer 1.5 hours.
5) Finally, open the pot cover, add the crystal sugar and salt, stir well, and turn to high heat for cooking 10 minute. When the rock sugar is completely melted, the soup will slowly dry up.

* * Add white sugar in step (4) to add flavor to trotters during the stewing process. Adding crystal sugar in step (5) can make the color of the finished trotters more beautiful.
Pig's trotters need to be stewed for a long time. After the pigskin becomes soft and sticky, it is easy to stick to the bottom of the pot. If it is made in a non-stick pan, it will keep the pig's hoof skin intact better than that made in an iron pan.
