Jianshui Roasted Tofu, also known as Lin 'an Tofu, is a traditional China dish in Jianshui County.

Originated from the local garrison in Yunnan during the Ming Dynasty. In the Ming Dynasty, Jianshui Tofu in Lin 'an was famous all over Chengnan Township, Yunnan Province. When the temperature of the kiln chamber in the Dragon Kiln reaches 1200℃, the purple pottery will have a strange kiln change, or it will be black, crimson or reddish purple, and it will have an unexpected magical color. Jianshui pottery after kiln transformation is as mysterious as a cloud.

It is said that there are 65,438+028 ancient wells in Jianshui, but the most famous one is definitely Dabanjing outside the West Gate, a China on the tip of the tongue, which has made this ancient well famous for more than 600 years.
