The fried string originated in Leshan, which is located in the west of southern Sichuan and is rich in bamboo such as Phyllostachys pubescens. Since ancient times, people have used bamboo sticks to string ingredients, and strings are made of bamboo sticks. After the reform and opening up, string stalls and small shops have become a major feature of Leshan Street, and fried string is one of them.

This is the fried string developed by Changzheng Pharmaceutical Factory (now Sichuan Changzheng Pharmaceutical Co., Ltd.). Long March Pharmaceutical Factory used to be an old state-owned enterprise in Leshan City, with a huge factory area, including a string of stalls selling fried skewers, which was very famous. Later, due to the reform of state-owned enterprises, individual laid-off workers switched to catering industry and sold fried skewers called "fried with long medicine". Because Leshan is a tourist city with many tourists, the business of "long medicine decoction" is hot and quickly becomes popular. Other vendors rushed to imitate, and they made signs of long-term decoction.

Fried leeks and other vegetarian dishes

With the development of tourism, long medicine decoction spread rapidly to Chengdu, Chongqing and other surrounding cities. Due to the decline of Changzheng Pharmaceutical Factory and the decline of its popularity, "Changyao" was replaced by "Leshan", hence the name "Leshan roasted seeds and nuts".

"Fried" is a typical cooking method in Sichuan and Chongqing, and another famous snack "Spike Potato" in Leshan is fried. Sichuan and Chongqing know more about the cooking method of frying, but foreign tourists don't know it. Because the string has long been famous, some merchants have also played the signboard of fried string incense.

With its unique flavor and the advantages of Leshan as a tourist city, fried skewers quickly became popular, becoming a new strong genre in Leshan skewers, and being listed as the "four famous skewers of Leshan" along with Leshan Ji Bo, Niuhua Mala Tang and Leshan Barbecue.
