The cheesecake making method is as follows:
Materials: 250g cream cheese (cheese cream), 150ml milk, 80g sugar, 3 eggs, 20g cornstarch, low 2 tablespoons of gluten flour, 60 grams of raisins, half a lemon zest, 130 ml of animal whipping cream, 5 ml of lemon juice.
Method:
1. Separate the egg white and egg yolk. Beat three egg yolks, add 50 ml of milk, and then add cornstarch. Stir evenly until the cornstarch is completely dissolved and turns into a granule-free egg milk liquid for later use.
2. Mix 100 ml of milk and 20 grams of sugar, put it into a container that can be heated at high temperature, bring to a boil over low heat and then turn off the heat.
3. Immediately pour in the egg milk liquid in step 1, stir evenly, then continue cooking over low heat until a thick egg yolk paste is formed, remove from the heat and cool until set aside.
4. Soften the cream cheese (cheese cream) at room temperature, beat it with a whisk until smooth, add the cooled egg yolk paste, then add 130 ml of fresh cream and half a lemon peel. crumbs and mix well.
5. Sift in the flour and mix well.
6. Pour in the raisins and mix well to form cheese paste.
7. Start beating the egg whites. Add lemon juice to the egg whites. Beat the egg whites until they are thick and foamy. Add sugar in three batches and beat until wet peaks form.
8. Pour 1/3 of the meringue into the cheese paste, use a rubber knife to stir evenly from the bottom up (do not stir in circles to prevent the protein from defoaming). Pour the remaining meringue into the cheese paste and continue to mix evenly with a rubber knife.
9. Pour the mixed cake batter into the mold and smooth it out. Pick it up and shake it hard twice on the stove to knock out the big air bubbles inside. Fill the baking pan with water, then wrap the bottom of the cake mold with tin foil, put it into the water-filled baking pan, and then put it in the preheated oven, middle and lower racks, 150 degrees, and bake for about 2 hours.
10. Take it out of the oven immediately after baking, remove from the mold after cooling, brush some lemon juice and orange juice on the surface, and refrigerate overnight before eating.
