Ingredients: soft-shelled turtle1(250-500g), vegetable oil 60g, yellow wine 20g, ginger, onion, pepper and rock sugar soy sauce.
Making:
1. Put the turtle in a pot, heat water (about 40℃) to make it excrete urine, then chop off its head and feet, cut it open, remove its shell and internal organs, wash it, and cut the nail fish into pieces.
2. Add vegetable oil to the pot, heat it, add the nail fish, stir fry repeatedly, add seasonings such as ginger, onion, pepper and rock sugar, cook with soy sauce and yellow wine, add appropriate amount of water, and simmer slowly until the nail fish is rotten.
Exercise 2
Ingredients: Turtle 1 piece, red dates1piece, longan meat10g.
Making:
1. Wash the soft-shelled turtle, shell it, cut the meat into pieces, and put it in the pot with red dates and longan meat.
2. Add soy sauce, Shaoxing wine, sugar, oil and water. Boil and season.
Exercise 3
Ingredients: 500g tortoise, 30g medlar, 35g walnut, monosodium glutamate 1 g onion 1 g ginger 1 g pepper 1 g yellow rice wine 1 g rock sugar 1 g.
Making:
1, grinding walnut kernel into powder;
2. Wash the medlar;
3. Put the tortoise into the basin and heat the water to about 40 degrees to make it excrete urine;
4. The turtle's head, feet, shell and internal organs are removed, washed and cut into pieces;
5. Heat the pot, add vegetable oil, and after heating to 60%, add the nail fish and stir fry repeatedly;
6. Add ginger slices, onion knots, pepper, yellow wine, soy sauce, chicken soup and appropriate amount of water;
7. Add rock sugar, medlar and walnut powder, first boil with strong fire, and then simmer with low fire;
8. After the nail fish is cooked, adjust the taste with monosodium glutamate, stir fry a few times, and put it into a bowl. Eat soup and fish.
