I originally wanted to buy Mr. Liang Shiqiu’s Yashe Tan Food, but I searched all over the store’s books and couldn’t find it. I guess it’s because the version is too old. With the help of the enthusiastic store clerk, I chose this salty and light taste, which is a collection of Mr. Liang Shiqiu's essays about eating.
This collection of prose was printed for the first time in August 2018 and was published by China Textile Publishing House. The publishing house also reorganized Mr. Liang Shiqiu’s prose and published a series of high-quality prose. This book has a salty taste, and the light and mild taste is just one of them. The cover of the whole set of books is red background, with a white title and a white waist. The binding is very simple, but I really like the watercolor paintings on the white waist. Being simple will highlight the theme of the book. It's just that such a long title feels too casual and lacks the novelty and sentiment of Yashe's talk about food.
Make a cup of tea and read this book. Mr. Liang Shiqiu talked about the food of his era like a treasure trove, but I suddenly discovered that no matter what era it is, only the food will not change its color. What Mr. Liang said, Lion's head, curry chicken, rice pudding, etc. can still be enjoyed on today's dining table.
This book is divided into five parts
The first part records the folk breakfast snacks in the north. One of the articles is about Beijing Douzhier. Yes, it's very interesting. The book says that the beauty of bean juice is that it is sour, with a strange smell of rancidity, and it is hot. You can only drink it by sipping, not gulping it down. Although I have been to Beijing many times, I have never known such a thing. Although the description in the book is not beautiful, I can't help but want to try it. For food, you can only understand the taste after tasting it. Just like durian, some people find it smelly and others find it fragrant. I am someone who thinks durian smells good. I remember once when I went to the supermarket, I smelled a fruity aroma coming from a distance. I went away looking for the fragrance, only to find that the supermarket lady was cutting durian for a customer. She didn’t like durian. Everyone hid their noses, frowned, and left quickly. I was the only one who didn’t buy it and still stood by. Standing at the end, I also bought a small box. I have always been curious about people saying that durian has a tuck-in smell, so before eating it, I took out a small piece and held it under my nose to smell it. Well, the tuck-in smell was immediately there. In my nose, I felt something was wrong even before I started eating. I reluctantly put it in my mouth, thinking of the smell just now, but I couldn't swallow it. Even so, every time I encounter durian cutting in the supermarket, I still stay for a while. Even though I can't eat it, it's good to smell it.
The second part, Taste of the World, includes various ingredients used in making delicious food. What impressed me the most was the article about sea cucumbers. Every time I see a sea cucumber that is black and covered with thorns, especially the open and squirming sea cucumber, I feel like I am eating a mollusk when I bite into it. When people's imagination is too rich, they will always miss some beautiful things. Although Mr. Liang Shiqiu also thinks that sea cucumbers are not good-looking, he explained in detail the different ways to eat them, braised in braised sauce and cold salad. Mr. Liang Shiqiu’s first recommendation is cold salad - sea cucumbers are boiled and cooled, cut into thin strips and placed in the refrigerator for later use. Prepare soy sauce, vinegar, sesame oil, diluted sesame paste and minced garlic. When serving, pour these ingredients over the sea cucumber and mix well. It will be cool, fragrant and very refreshing. Seeing this, I was already ready to go downstairs to buy ingredients.
Part Three: Gourmets do not have to be gluttons. Gluttony is a ferocious beast in ancient Chinese legends, and it is a symbol of greed. The teacher mentioned in the preface of the book: When the Roman tyrant Nero was giving a banquet to his ministers, he tore off thick and strong chicken legs, lifted them up and ate them as if there was no one around, as if he was a glutton. You can tell at a glance that this is a derogatory connotation. It suddenly occurred to me that N years ago, when buffets were just starting to emerge, most of the guests’ tables were filled with food, regardless of whether their stomachs could hold it, for fear that they would suffer a loss. Thinking about it, I used to be like this. I went in with my stomach flat and came out with my stomach pressed up. Not only did my stomach feel uncomfortable, but I could also experience the taste of the food. What a gluttonous look.
There is an article in this section about Braised Green Clams. This Braised Green Clams is a famous dish in Shandong restaurants in Beiping. It is first blanched in boiling water, then the shells are broken and sprinkled with cooking wine, ginger and pepper. Powder it and serve it immediately, making it an excellent accompaniment to wine. Seeing this dish, I can’t help but miss my grandpa. I remember that a customer used to give me a jar of unknown shellfish soaked in wine. Every time my grandpa ate, he would take some out of the jar, gently break open the shells, and take a sip. , the meat entered my mouth. Every time I saw my grandpa eating it, I became greedy and wanted to try it. However, as soon as I entered it, I felt extremely fishy and vomited it out immediately. Therefore, my grandpa rejected it as a waste of delicious food. I have always loved watching my grandpa eat. I always felt that no matter what he ate, it was as if he was enjoying the delicacies of the world.
The fourth part, the food in all directions is just a bowl of human fireworks. The most outstanding thing in this part is probably the bear paw in Bazhen. It is difficult for ordinary people like me to eat this kind of food. However, it is also a pleasure to read the taste of bear paw in the book and imagine it for yourself.
The fifth part, Food and Literature, mainly contains Mr.’s cooking of other countries, which can be regarded as a summary of the whole book.
If you are a food lover, this book is worth reading. The book does not have too fancy words, but simply tells Mr.'s daily life.
As the teacher said, "Real food is just an enjoyment of ordinary colors, flavors, and flavors. There is no need to search for treasures with evil spirits."
