Casserole is a very good kitchen utensil and is used almost every day in my house. The casserole is suitable for making soup or stewing meat, and I usually use the casserole to make spicy hoof flowers. Please see the specific steps below.
Step 1: Prepare raw materials and seasonings
The main raw materials are: 300 grams of pig trotters, 30 grams of spicy millet, 30 grams of rock sugar, 20 grams of coriander, and appropriate amounts of green onions and ginger.
The main seasonings include: 5 grams of light soy sauce, 3 grams of salt, 1 gram of chicken essence, 5 grams of cooking wine, and appropriate amounts of chili oil, pepper oil, and sesame oil.
Step 2: Cut the ingredients into knives
Wash the fresh pig's trotters and cut them into large pieces; wash the spicy millet and cut it into small circles; cut the coriander into small pieces; slice the ginger; Cut green onions into slices.
Step 3: Blanch the pig's trotters
Put the cold water into the pig's trotters, add cooking wine, wait for the water to boil, blanch for 5 minutes, and then skim off the foam. Continue to blanch for 5 minutes. After blanch the water, take it out, rinse it and set aside.
Step 4: Fry the sugar color
Restart the pot, pour in the rock sugar, add a spoonful of water, add an appropriate amount of vegetable oil, then turn on low heat and stir-fry. During this process, you can see that the rock sugar slowly melts and the color changes from light to dark. When the rock sugar turns amber, turn off the heat, add an appropriate amount of hot water, stir evenly, and the sugar color is ready.
Step 5: Prepare the sauce
Prepare a small bowl. Pour the chili oil, pepper oil, sesame oil, chicken essence, light soy sauce, salt and millet into the bowl. Stir evenly to make a sauce and set aside.
Step 6: Simmer in a casserole
Prepare a casserole, add an appropriate amount of water, pour the pig's trotters into the casserole, add green onions and ginger slices and simmer over low heat for an hour . When the soup becomes thick, add the prepared sauce and continue to simmer for half an hour. Finally, sprinkle with coriander and garnish.
The pig's trotters slowly stewed in a casserole are soft, glutinous and fragrant. The taste is still different from the pig's trotters stewed in other pots. This is why I like to cook in a casserole.
However, before using a casserole, you must fully understand the characteristics of the casserole. The casserole is made of ceramics. Although it has the advantages of slow heat dissipation and even heating, it is easy to burst when the temperature difference is too large, so the casserole generally cannot be dry-fired.
