Third, sauce pig bones.
Ingredients: pork bone, bean paste, Pixian bean paste, cinnamon, star anise, pepper, dried pepper, fragrant leaves, onion, ginger, garlic, coriander, shallot, soy sauce, oyster sauce, cooking wine, rock sugar and edible oil.
Exercise:
1. Put the pig bones in clean water and replace them every half hour. Soak in pig blood, about two or three times. Put the cleaned pork bones into a cold water pot, add ginger slices, garlic spoon and a spoonful of cooking wine, and boil over high heat. Scoop out the boiled foam until there is no foam. Remove the pig bones after turning off the fire.
2. Add an appropriate amount of cooking oil, heat with low fire, add rock sugar, boil the rock sugar, then add dried Chili, star anise, pepper, onion, soy sauce slices, garlic slices and fragrant leaves, stir-fry until fragrant, then add 3 spoons of bean paste and 0.5 spoons of Pixian bean paste, stir-fry, add appropriate amount of water, and turn on high fire.
3. After boiling, put the pig bones in, then add 1 tbsp soy sauce, 0.5 tbsp soy sauce, 2 tbsp oil consumption, boil over high fire, and then simmer for about 1.5 hours, and the soup will dry.
4. After boiling, add coriander and chopped green onion.
Fourth, pig bone soup.
Ingredients: pork bones, chicken bones, shrimps, ginger slices and water.
Exercise:
Wash pig bones and chicken bones and cut them into blocks for later use.
Wash and drain the shrimps for later use.
Boil chicken bones and pig bones in boiling water for 5-6 minutes to remove blood bubbles.
Remove chicken bones and pig bones and rinse with cold water.
