After the eel is slaughtered, it can be slightly scalded with boiling water to remove some mucus on the surface of the fish. Then cut it into sections with scissors (as shown in the figure), which cannot be completely cut. Marinate with cooking wine, salt and ginger for 30 minutes.
Soaking a proper amount of dried prunes in water can prevent them from being too salty and dry.
