One night, my father told an interesting story: a fellow villager in Huizhou, who was engaged in a small business of hairy tofu in Shanghai at that time, was often driven out of the concession by red-headed Asan (an Indian policeman employed in the concession) whenever he carried the burden of hairy tofu to sell it in the concession. Because the hairy appearance of hairy tofu is very ugly and looks unhealthy, it is not allowed to be sold in the concession. Huizhou villagers had to carry the burden of hairy tofu from the concession and put it in Ma Lukou, the old Shanghai city opposite the concession. Before long, these red-headed three men slipped out of the concession in twos and threes and went to the tofu stall for dinner. There are many anecdotes about hairy tofu. According to legend, at the end of the Yuan Dynasty, Zhu Yuanzhang was down and out, begging all the way to Huizhou and living in a broken mill in a small mountain village. One day, he asked for a bowl of tofu and left some on the barrel of the stone mill. Unexpectedly, tofu was covered with white hair in a few days, and he was reluctant to throw it away. It happened that in those days, the weather was bad, the rain kept falling, and Zhu Yuanzhang, who was hungry, could not go out to beg and had nothing to eat. He had to find some sesame oil and pour it into the pot to fry white hairy tofu to satisfy his hunger. I didn't expect this white-haired tofu to "lick" as soon as it entered the pot, and then it was fragrant and golden. He put a piece in his mouth, ah! I didn't expect this hairy tofu to be so delicious, so I spent this hungry time with him. So "Huizhou hairy tofu" has become a kind of relief food snack. There is another story. 1938, the new fourth army rested in Huizhou. After his busy schedule, Comrade Chen Yi likes to gather with several fellow villagers around the street to taste tofu, enhance the friendship between the party and the masses, and publicize the anti-Japanese and national salvation. When he was in high spirits, the villagers always laughed behind Mr. Chen's back. Speaking with a Sichuan accent, Mr. Chen pointed to the wok and said, "Put more peppers." Now hairy tofu has become a unique traditional snack in Huizhou, attracting the attention of gourmets. There are two main ways to eat: 1. Traditional way of eating: nowadays, hairy tofu is a burden all over Huizhou, with dry wood, stove and flat-bottomed pot at one end and sesame oil, spicy fire, hairy tofu, chopsticks and wine glasses at the other. Picked it up in downtown and set up a stall for speculation. With "click, click!" Dada. "The crisp and rhythmic tapping of bamboo boards attracted customers to try in advance and satisfied their desires. There are three or five friends sitting around the booth, facing the hot, delicious, golden tofu, holding Huizhou wine in one hand and bamboo chopsticks in the other. Some want to add some ingredients (chop some eggs on the hot tofu to blend), put chopped green onion and hot sauce, and chat while eating, talking about the past and the present, and talking about friendship and business. 2. Modern eating method: First, fry tofu in a hot oil pan. After a while, both sides are golden yellow, pick them up and put them on the plate. Almost at the same time, pour in the stir-fried diced pork, diced mushrooms and diced winter bamboo shoots, add starch and mix well. Sprinkle with chopped green onion and pepper and serve on holidays. You can also use fried hairy tofu with yellow sides, add shredded bamboo shoots and vegetables to make a clear soup of hairy tofu, which is delicious and does not need monosodium glutamate. This is a famous soup unique to Huizhou banquets.
