Separate the egg whites and yolks and put them into two water-free stainless steel basins. Put 20g xylitol and a few drops of lemon juice in the egg white basin, then beat the egg whites with a whisk. When it resembles soap lather, add 20g of xylitol.

Continue to beat until there are obvious lines, add 20g of xylitol.

Beat at high speed for about 1 minute. When the whisk head has sharp corners when you pull it, it means it is ready. (Mine is a little beaten, sorry, but don’t beat it like cotton wool, otherwise it will be completely unusable.)

Put it into the egg yolk basin Add milk, oil and 40g xylitol, stir well with chopsticks, do not beat.

Put in the sifted flour, stir slowly, then add 1/3 of the beaten egg whites, stir from bottom to top. . After mixing, add it to the remaining 2/3 egg whites. Stir well in the same way.

Pour the mixed batter into the mold, smooth it out, and then shake twice to knock out the air bubbles. Place in the preheated oven at 110 degrees and bake for 1 hour.

Notes

Lemon juice is optional, the purpose is to remove the fishy smell from the eggs.

You can also use flour without sifting, but you need to mix it evenly.
