There is a dish in Yunnan called Beef Steak. It is actually similar to beef in clear soup. The beef is slowly cooked over low heat until it is tender. It must be served with mint, and then add chili peppers to dip it in water. A bowl of Beef Steak in winter will make you whole.

Beef steak contains beef, beef offal, and beef tendons. Beef offal is a bit difficult to make at home, so you can buy ready-cooked beef offal.
Today I cooked a pot of beef brisket and beef tendon at home, and it tasted great!
Appropriate amount of beef brisket, appropriate amount of beef hooves, appropriate amount of ginger, appropriate amount of grass fruits, appropriate amount of pepper, appropriate amount of shallots, appropriate amount of star anise, appropriate amount of coriander, appropriate amount of mint 1. The ingredients are as shown in the picture. I bought one pound of beef brisket and one cow's hoof.
2. The stall owner chopped the beef for me, soaked it in cold water for 1-2 hours, and then rinsed it with clean water.
3. Put the beef into a casserole, add enough water, and bring to a boil over high heat.
4. Wash and drain the ginger, clean the fruits, and put the peppercorns in a small non-woven bag. The main reason is that the peppercorns themselves cannot be eaten in my house!
5. After the water boils, skim off the foam. It is not recommended to blanch the beef in clear soup.
6. Add the prepared ingredients, and you can also add some star anise, cinnamon and other seasonings according to your preference. Cook over low heat for 4-5 hours. If you want to go faster, use a pressure cooker. However, the pressure cooker does not have the same flavor as using a casserole over low heat.

7. Prepare shallots, coriander, mint, and dried chilies.
8. Put a little oil in the pot, roast the chili peppers over low heat until fragrant, until they are slightly mushy, but not overly mushy, otherwise the chili peppers will be bitter.
9. After the peppers have cooled naturally, put them in a garlic mortar and pound them into pepper noodles.
10. Wash and chop the shallots and coriander. Pick the young leaves of the mint, wash them and cut them into sections.
11. Season the cooked beef with salt.
12. Take the spicy paste, add salt, green onions and coriander, a little bit of it will make it very delicious. When eating, add beef soup to make the spicy paste and dip it in water.
