How to make Italian biscotti

Main ingredients: delicious biscotti 120g Parmesan cheese 2 eggs 30g raw sugar 75g oil 80g Greek yogurt 250g white flour 2 tsp baking powder salt 1/2 tsp 1/2 tsp cracked black pepper basil 1

tsp dried oregano 1 tsp 60g cranberries Preparation method: 1. Turn the oven to 160oC (fan forced) 2. Line a baking tray with baking paper.

3. Place Parmesan cheese into thermometer ix bowl - Blitz speed 8/10 seconds.

Place on another plate 4. Place 2 eggs and 30g raw sugar in TM bowl - Blitz 4 sec/speed 6. 5. Add oil and yogurt, mix 4 sec/speed 56. Add flour and baking powder

7. Add all other ingredients (except 20g of Parmesan cheese).

8. Reverse/Speed ??3/10 seconds 9. Check to see if it’s all mixed together.

Scrape down the sides and repeat if necessary.

10. The dough should be firm (but maybe a little sticky).

11. Cut into 2 - 3 logs on the prepared tray.

(Coat the log with flour if it's sticky).

12. Sprinkle the remaining Parmesan cheese over the logs.

13. Bake for 20 - 25 minutes until just touched.

14. Remove from oven and let cool for 10 minutes.

15. Reduce oven temperature to 150 degrees Celsius.

16. Using a sharp serrated knife, carefully cut the log into slices approximately 1cm thick.

17. Place back on baking sheet and bake for 20 minutes.

18. Turn the slices over and bake for another 20 minutes.

19. Remove and place on a wire rack to cool completely, then store in a well-sealed container until serving.
