first step
Two fish with partial mouths, remove gills and internal organs, clean them, and cut a few oblique mouths on the back of the fish to taste;

Stir-fry the fish in oil, add sugar, soy sauce (a little more), cooking wine and a little water in turn, hold the fish with a shovel and don't let the fish paste the bottom of the pot. Cover the pot, bring to a boil with high fire, turn to medium fire and continue stewing 10 minute;
Fourth step
In the process of stewing fish, because there is little water, you should always open the pot to move the fish so that it does not paste the bottom of the pot, and pour the fish soup in the pot on the incision on the back of the fish with a shovel to make it tasty.
Step five
Add coriander and sesame oil, pour the fish with fish soup, and you can go out of the pot! Is it simple?
Because the fish is relatively large, it is easy to break it by pouring it directly from the pot into the fish plate with a shovel.
The unique fresh fragrance of marine fish floats out, which is particularly attractive. The whole process of stewing fish, without salt, is soy sauce, which is very unique and fragrant.
