When I was very young, my family used a rice cooker to eat hot pot.
It’s easy to prepare. You need to prepare the base ingredients for the pot. Some people like to make their own base ingredients, such as onions, ginger, garlic, cooking wine, and peppercorns, and adjust the flavors by themselves.
But I always like to eat any kind of base that I can buy ready-made from outside, that is, grassland or something like that.
Once this kind of seasoning is put in, it will be almost the same as the hot pot eaten outside. Then there is the preparation of meat. Mutton and pork belly are two must-haves. Needless to say, mutton is not a real hot pot without hot pot.
Let’s focus on the pork belly. After the pork belly is cooked, the taste is invincible when dipped in dipping sauce. It is fat but not greasy.
If you have some conditions, get some seafood. If not, get some meatballs, crab sticks and the like.
Among the fungi, white jade mushrooms and crab-flavored mushrooms are my favorites, followed by normal shiitake mushrooms, golden acupuncture mushrooms, which are often eaten in hot pot, and fungus.
As for vegetables, I prefer to eat cooked coriander, which tastes very good and has a completely different taste than raw vegetables.
In addition, spinach, cabbage, and lettuce are also often eaten in hot pot.
In addition to these regular ingredients, tofu skin, frozen tofu, and kelp are also very good.
Vermicelli and fat sheep noodles are also a must.
The most important thing is the noodles. The noodles cooked in hot pot are the essence of all hot pots.
Finally, let’s talk about seasonings. As for dipping, I loved fermented bean curd and Wang Zhihe’s at first, but now I eat the prepared ones sold in the market. Sometimes I also buy sesame paste and bring my own sugar and vinegar.
